How does Truckee bakery pickup work?
Truckee bakery pickup works only when the bakery has accepted a preorder: a specific list of items, a collection date and a time window, confirmed by the bakery in writing or by a named person on the phone. Anything else is walk-in availability, which means whatever is on the counter when you arrive. Some Truckee bakeries do not take preorders at all. Build a one-page confirmation sheet, keep walk-in plans separate, and pack a backup breakfast.

Is it a preorder or a walk-in?
Treat these as two different products.
- Accepted preorder. The bakery has agreed to hold named items, with a confirmation, a collection window and a contact.
- Walk-in availability. You buy what is left during opening hours. Nothing is held, and a menu posted online is a forecast, not a reservation.

How should substitutions be handled?
Decide in advance. Three options cover most cases:
- No substitutions. Refund or credit if the item is unavailable. Use this for anything that carries an allergy or a specific meal.
- Like-for-like. Same category, similar size: another plain loaf for a plain loaf. State the limits, for example "no nuts, no seeds."
- Baker's choice. Acceptable only when nobody in the group has a dietary restriction.
Never allow substitutions on an allergy-restricted item. A counter swap is a new product nobody has cleared.
What should you ask about allergies and gluten-free items?
The FDA lists nine major food allergens: "milk, eggs, fish, Crustacean shellfish, tree nuts, peanuts, wheat, soybeans, and sesame." Its food allergies page also states that federal allergen labeling requirements "do not apply to foods that are placed in a wrapper or container (such as paper or a box for a sandwich) following a customer's order at the point of purchase." A pastry boxed to order may carry no allergen label, so ask before ordering and record the answer.
The facility matters as much as the item:
- Sierra Bakehouse marks some menu items "GF" or "Vegan," and the same page states: "We are not a Nut Free or Gluten Free establishment. Any nut or gluten allergies are highly advised not to consume our baked goods."
- Truckee Sourdough's storage and FAQ page says its facility manufactures breads that use "powdered milk, pasteurized eggs, tree nuts (walnuts only), and, of course, wheat," that it "currently does not offer gluten-free products," and that "if you have an extreme allergy, it is always better to avoid our products."
For gluten-free claims, the FDA's gluten-free consumer update sets a limit of "less than 20 ppm (parts per million)" for the unavoidable presence of gluten in packaged foods labeled gluten-free, says restaurants making a gluten-free claim on their menus "should be consistent with the FDA's definition," and suggests three questions when ordering: what the restaurant means by the term "gluten-free," what ingredients are used in the item, and how the item is prepared. Ask the same three questions at a bakery counter.
If anyone in the group has a diagnosed food allergy, follow their own medical plan and carry any prescribed emergency medication. If the bakery cannot answer the questions clearly, do not order for that person; use the backup breakfast instead.
When should you collect, and what if the road closes?
Choose the earliest window that fits your arrival. Check highway conditions on the Caltrans road information page, or by phone at 1-800-427-7623, the day before and the morning of collection. If weather or traffic will put you outside the window, contact the bakery before the window ends. A call afterwards is a request; a call before is a change.

How should bakery items be stored at the rental?
Sort the box by filling, not by appearance.
- Plain bread and unfilled items. Truckee Sourdough recommends its breads "be consumed the same day as purchased." To keep a loaf, it says to "Place cut side down on a cutting board and cover with a good towel," or to double bag it and freeze it. Frozen bread should thaw in the bag "for a few hours," then heat "in the oven for 3-7 minutes at 350 degrees." The same page says the company generally expects its bread "to last 6 days."
- Perishable fillings. Quiche, cheesecake, custard, cream, and meat or cheese fillings need cold storage. The FDA's safe food handling guidance says to refrigerate perishables "within 2 hours of cooking or purchasing," to refrigerate "within 1 hour if the temperature outside is above 90° F," and to keep the refrigerator "consistently 40° F or below." Collect these items last and take them straight to the fridge.

What is the backup breakfast?
Every bakery plan needs one, bought or packed before the pickup day:
- Shelf-stable bread, crackers or tortillas.
- Whole fruit.
- One refrigerated item, such as yogurt, held at 40° F or below.
- A sealed product that every person with a dietary restriction can eat.

Not always. How should I store bakery bread at a Tahoe rental?
Truckee Sourdough Company recommends eating its bread the same day, storing a cut loaf cut side down under a towel, or double bagging and freezing it, then thawing in the bag for a few hours and heating at 350 degrees for 3 to 7 minutes. What if snow or traffic makes me miss the pickup window?
